  • Hard White Wheat can take a real knead and a higher hydration. Give it a windowpane if the style wants one.
  • Fresh whole-grain flour ferments faster and drinks more water. Watch the dough, not the clock, and consider a slightly cooler bulk.
  • This mix is a strong 12.6% protein. It can take the water and a fuller knead — don't underhydrate or the crumb will be tight.

6–8 minutes to a soft, supple ball.

Rest

10 minutes after mixing, then finish the fat. For this batch: about 10 min.

Rise / bulk

60–90 minutes until puffy. Yogurt keeps it tender even if you rush a little. For this batch: about 1h 5m.

Proof

After dividing, rest balls 15–20 minutes so they roll without snapping back. For this batch: about 15 min.

Bake

Cast-iron or steel at max heat, 60–90 seconds a side, or under a broiler. Brush with butter. For this batch: about 8 min.

Yogurt is extra hydration and acidity. Count it at ~85% water in the tailor.

Method

  1. Mix flour, water, yogurt, yeast, sugar, and salt. Knead in ghee or oil.
  2. Rise until puffy. Divide into 80–90 g balls.
  3. Rest, then roll teardrops. Optional: minced garlic or nigella.
  4. Cook on a ripping-hot skillet until bubbles set, flip, char.
  5. Brush with melted butter or ghee. Eat immediately.
